While all three have a distinctive, full-bodied flavor and fatty, yet firm, flesh, there are a few minor differences that set these mackerel apart. The Boston mackerel tends to be more tender in texture. The King mackerel, larger than the Boston, is known for its meaty, tough flesh. And, finally, one can distinguish the Spanish mackerel by its golden spots and milder taste.

Oven cook - From Frozen: Remove all packaging. Wrap mackerel fillets in lightly oiled foil to form a parcel. Place on a baking tray. Cook in the centre of a pre-heated oven at 190°C/375°F/Fan 170°C/Gas Mark 5 for 20-25 minutes.
